Raw design for raw food.

Brut is a tiny restaurant and natural wine bar serving sustainably produced ingredients and dishes defined by philosophy of authenticity and creativity. Brut’s flavors come from a mix of Hong Kongese, French and Spanish cultural influences - a fusion perfectly representative of Hong Kong's multi culturalism.

Designed by KAMP.studio to reflect the Brut philosophy, every detail of the restaurant was custom crafted to create an atmosphere that answers the complex brief of 'at once luxurious and authentic, local and international, intimate and contemporary, raw and sophisticated'.

Bespoke Furniture:
Furniture lighting and menu details were designed bespoke and crafted in walnut, brass suede and green marble. The sole non-custom feature of the space is a set of bar stools by Hong Kong based furniture designer Sean Dix.
A gestural neon light marks a change of atmosphere in the kitchen and bathrooms.
To contribute to the current collective effort to preserve Hong Kong’s craft of neon glass blowing, a decision was made to include a classic orange/red neon by a local craftsperson. To differentiate the piece from the cheap LED signs now found throughout the city, the neon was used not as a communication tool but for its lighting qualities alone. The neon ‘sign’ was abstracted into a simple sketch-like gesture, further re-enforcing the restaurants theme of raw creativity.
Concrete walls with scribbled instructions for the cladding of the previous occupants were left exposed, to help connect the restaurant with it’s context.

Decorative ceramics were commissioned using southern Chinese glazing techniques combined with modern forms, chosen to fit just as comfortably into European context as an Asian one.
Hong Kong Based fashion photographer Nicoline Aagesen was commissioned to create artwork ‘in the space, for the space’.
Exterior:
Brut’s exterior is designed to nestle quietly and confidently into its context at the edge of the emerging restaurant district of Sai Ying Pun. A custom door handle, made from wood salvaged form Hong Kong harbor, offers a warm, textural welcome.
